What can I say

So I've had a long weekend.  Friday was our youth day holiday and the time off was great.  Thursday night I went to Grand Turk finish some work.  A friend and I went to karaoke at the White sands hotel,  stopped by "German" a night club and got home around 3am. 

Friday I spent the day helping my aunt with some programs for the church women's group anniversary. (I though i was never going to finish sorting and stapling). Friday evening went to a baby shower. Unfortunately,  it was so hot humid and boring i didn't take 1 picture. The colors were beautiful orange and Blue but the evening did not go well. 

Saturday morning I spent with my grandfather and  came back to Provo that afternoon.  Did a little grocery shopping and got dressed for dinner with my wonderful boyfriend we had dinner at "Salt" which was nice (I love spending time with him even when I'm mad). The menu isn't much but you have to try it.

And Sunday was late church service, got my hair straighten, my mom cooked  a small dinner and it was tv time.  My day was full of love from Maid in Manhattan,to The proposal than bride wars their was 27 dresses and a backup plan.

We have finally starting to feel some cool weather so cuddle in bed and before i knew it,  it was Monday

Breakfast at dinner :)))

I love breakfast. It doesn't matter what time of day it is, It doesn't matter what season it is I am always in the mood for breakfast. 

Tonight I made my version on an ihop Colorado omelet.  All you need is eggs, a little milk, onions, ham, sausage and steak or  stew beef (that had left over from Sunday) and your favorite cheese I used cheddar.  And here it is. Enjoy.

What's for dinner?

Today I'm having: Cinnamon Chicken and Apple potato salad

You can use your favorite part of the chicken to do this and since I'm a dark meat lover I used chicken thighs.  You season with a merinate of cinnamon, complete season, crushed pepper, brown sugar and teriyaki sauce. This can be done the night before or 3hrs before baking. Then bake on 350º until chicken is  cooked soft and moist.

While baking the you can prepare the salad. You will need an apple peeled and chopped, stalk of celery chopped, half of onion chopped, 1/2 cup sour cream,  1/2 cup mayo, 1tsp sugar, 2 boiled eggs chopped and 3-4 potatoes peeled cubed and boil.  Season with salt. 

In a large bowl mix sour cream,  mayo,  sugar, season, the celery, onion, egg then fold in the potatoes and refrigerate until serving time.

Served with fresh iceberg lettuce or you can use the lettuce of your choice.

Desperate for ............

Okay it not so bad but as you will see from my previous post i made oatmeal cookies this weekend but i am never satisfied with them.  I would prefer if they were sugary and chewy not fluffy and soft like cake.  Pleaseeeeee  help with  a recipe. Picture of what I want below.

Confession: every friday to get super  excited its the weekend and have nothing really to do.  Today had family over for dinner and afterwards we made oatmeal cookies and henna drawing, I'm convinced I need to be my old self again  and get a life but here we go.

Chicken & Avocado Salad

As usual we are always looking for something quick and easy to make and a late night crave has brought me down to this, my version of chicken and avocado salad.
2 regular chicken patties
1/2 head of lettuce


Cut chicken patty into cubes
Toss lettuce, chicken and top with avocado
In case your wondering. The trick to eating salad as a meal is to eat in large portion so you don't feel the urge to want something more. Enjoy!

Tonight's dinner-Shrimp

Parents, friends, love-ones I know we are always looking for week night dinner ideas that's easy and quick so this is what I cook tonight 15mins prep and 30mins cook
time.



Ingredient: 16 Shrimp, 1/2 Red Onion, 1 stalk Celery, 1/4 head Cabbage, 1 1/2 cup frozen Mix Veggie, 2 cups Rice, 1/2 quart Heavy Cream (this can be substituted with coconut milk for a caribbean flare), 3 tsp Butter, Avocado and seasoning. Serving of 4
Cut cabbage into thin shred and saute in skillet with a teaspoon of butter for 5-7 mins

cut up onion and celery

add veggie to cabbage and cook on medium heat for 3 minutes

add in onion and celery than season to your taste with crush pepper, complete seasoning and black pepper

immediately add in shrimp (I butterfly mine for better consistency)

Once shrimp has change color add cream and let simmer on low heat for another 5-7 minutes until milk thickens

and dinner is severed with Plain White Rice and Avocado
