Breakfast at dinner :)))

I love breakfast. It doesn't matter what time of day it is, It doesn't matter what season it is I am always in the mood for breakfast. 

Tonight I made my version on an ihop Colorado omelet.  All you need is eggs, a little milk, onions, ham, sausage and steak or  stew beef (that had left over from Sunday) and your favorite cheese I used cheddar.  And here it is. Enjoy.

What's for dinner?

Today I'm having: Cinnamon Chicken and Apple potato salad

You can use your favorite part of the chicken to do this and since I'm a dark meat lover I used chicken thighs.  You season with a merinate of cinnamon, complete season, crushed pepper, brown sugar and teriyaki sauce. This can be done the night before or 3hrs before baking. Then bake on 350º until chicken is  cooked soft and moist.

While baking the you can prepare the salad. You will need an apple peeled and chopped, stalk of celery chopped, half of onion chopped, 1/2 cup sour cream,  1/2 cup mayo, 1tsp sugar, 2 boiled eggs chopped and 3-4 potatoes peeled cubed and boil.  Season with salt. 

In a large bowl mix sour cream,  mayo,  sugar, season, the celery, onion, egg then fold in the potatoes and refrigerate until serving time.

Served with fresh iceberg lettuce or you can use the lettuce of your choice.

Desperate for ............

Okay it not so bad but as you will see from my previous post i made oatmeal cookies this weekend but i am never satisfied with them.  I would prefer if they were sugary and chewy not fluffy and soft like cake.  Pleaseeeeee  help with  a recipe. Picture of what I want below.

Chicken & Avocado Salad

As usual we are always looking for something quick and easy to make and a late night crave has brought me down to this, my version of chicken and avocado salad.
2 regular chicken patties
1/2 head of lettuce


Cut chicken patty into cubes
Toss lettuce, chicken and top with avocado
In case your wondering. The trick to eating salad as a meal is to eat in large portion so you don't feel the urge to want something more. Enjoy!

Tonight's dinner-Shrimp

Parents, friends, love-ones I know we are always looking for week night dinner ideas that's easy and quick so this is what I cook tonight 15mins prep and 30mins cook
time.



Ingredient: 16 Shrimp, 1/2 Red Onion, 1 stalk Celery, 1/4 head Cabbage, 1 1/2 cup frozen Mix Veggie, 2 cups Rice, 1/2 quart Heavy Cream (this can be substituted with coconut milk for a caribbean flare), 3 tsp Butter, Avocado and seasoning. Serving of 4
Cut cabbage into thin shred and saute in skillet with a teaspoon of butter for 5-7 mins

cut up onion and celery

add veggie to cabbage and cook on medium heat for 3 minutes

add in onion and celery than season to your taste with crush pepper, complete seasoning and black pepper

immediately add in shrimp (I butterfly mine for better consistency)

Once shrimp has change color add cream and let simmer on low heat for another 5-7 minutes until milk thickens

and dinner is severed with Plain White Rice and Avocado



*****Remember not to over cook veggies and shrimp*****

Caribbean Flovor

I know most of your are wondering what this is.

For those vacations goer and island life lovers this is no big secret. In fact most of us love it.

Its just Lobster.

Lobster season has been closed her since the 31st of March and my mouth just waters for it.

On the plate below we have home made mash served with chopped lobster,onions, garlic, peppers and mushrooms in a cream sause. (dont forget the salt and pepper to season)

I can just taste it. Can you?


Oh well so much of wanting what you can"t have in this world today. Now i'm back to work.

I clearly understand why pregnant woman wake their spouse up at 2-3 in the am to get this stuff.

I clearly understand why kids waller on the floor for this stuff. Okay that not an excusefor kids to be rude but ice cream is something to talk about.

You can eat this any time of the day, any time of the year.

Ice scream never fails to amuse me.

YIPPPPPPPPPPPP Going Bananas

Hello Family,

Hope all is well in this trying times of our life.

Its been a busy weekend for me but I did get time to bake that BANANA Bread for ya and it came out lovellllllllllyy.

I almost didn't want to cut it. But I did. This is food now ;) who we kidding.



All my wet ingredients


  
Adding the 1 1/2 cup of flour
 
Gotta have my non stick on the go
 
Pan all greased and dust with a lil flour
 
Ready to go
 
Ta dahhhhhhhh!
 
OMG! It Raise. It light, moise
 
Yes! I had to do it n it was great!:)

BIG MAC & CHEESE

Yummy Yum Yum!

I LOVE ME SOME MAC & CHEESE

When you talk about food that is good for the soul, THIS IS IT!!!!

Look at it! Just Look!
Warm, Mushy,Cheesy, goooood.

Those of you that dont like cheese, pasta or lactose. I dont envy you at all.

Mac & Cheese is:
  1. a medication for pain
  2. a consoler to hear your cry
  3. a snuggle buddy when your alone
  4. a gift to a house party
  5. need i say more..............
The best comfort food you can ask for.

There are so many recipes you would never image. OMG!

Mac & Cheese is something you can always add compliments (veggies, meat,etc) at you own descretion and make it work.

Note- please avoid buying cheap cheese you will never get the best quality to experience mac & cheese like I have.

Going Bananas

Hello Family,


At my work place I have recently move from a senior position in human resources to support services.

It was just two of us there and my former coworker now has a new partner, a new partner that think she is not just a coworker but the boss of her. The new lady has been pushing her around and piling her up with all of her work, directing aggressive attitude and driving my poor little size 2, 5'2" doll up the wall. She is going B@N@N@S in there with her.

Me being me :), I have decided to make use of this situation and below here is the recipe I will be using tonight to make banana bread.

There is nothing like a warm slice or two;) of banana bread, melted butter and tea on a cool night.

Banana Bread Recipe

Prep time: 5 minutes
  • Cook time: 1 hour

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/2 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
Yield: Makes one loaf.

Disclaimer: I cannot bake. My baking skill is so bad I may just make this recipe fail :(.
